Dinner tonight was a quick meal, but one of my favorites. Fried Rice, what a great way to get some vegetables, use up left-over rice, and make dinner in a flash.

In What's for Dinner?
Mac Daddy, oh how you save me from a life without mac and cheese. Tonight's version was made with extra vegetables thrown in, to make it healthier. I use quinoa pasta, which holds up better than rice pasta during the double cooking process.
