Good old-fashioned diner-style home fries. Delicious comfort, these potatoes are fairly easy to make, and are a great compliment to many meals, including as a breakfast side.

Diner Home Fries
Serves 4 to 6.
Place in a pot and cover with cold water:
2 lbs Yukon Gold potatoes (4 to 6) cut in half lengthwise, sliced 1/3 inch thick or so (I cubed mine)
Cover the pot and bring to a boil. Once boiling, turn heat down just a bit (to medium high) and cook for about 15 more minutes, until potatoes are thoroughly cooked but still firm. Drain well.
Preheat a large, heavy-bottmed skillet over medium heat. Add and let get hot:
2 tbsp vegetable oil
Add the potatoes and coat with the oil. Let them cook undisturbed for about 5 to 7 minutes; they should be lightly browned. If not then bring the heat up a bit. Toss them and let cook for 10 more minutes, flipping occasionally to brown all sides. They won't get all browned and crispy; just do your best. Add and stir in:
¾ tsp salt
½ tsp ground black pepper
